Our menu is inspired by our Arizona Roots, From natural wood burning and cooking over hot fires in the summertime despite the heat outside. We believe in traditional cooking that gathers Friends, Family and Memories. Everything from your backyard Pollo Asada to Low and Slow Prime Brisket.
Our business was established off a passion for cooking, this all started with a homemade drum smoker. We believe in consistency when it comes to our food. We build our own smokers to the standards in which we believe they will cook more efficiently. We apply the same love we do when building our smokers, into making our food. From our House Made Sauces and Rubs to our unique menu items.
This is a Family Owned and Operated Business. My Wife and I started this business with the idea of passing it down to our children to grow and prosper. We love the idea of being able to pop up from city to city and meet new people and spread love through good food and good conversations.
All our Meats are Smoked Low & Slow over our Custom Home-Made Smokers.
Our Prime Brisket is Smoked Low and Slow for over 12 hours, And then placed in our warmers to rest overnight allowing all the rendered down fat to re-absorb itself back into each delicious slice.
Our award-winning Pulled Pork is smoked Low and Slow for over 12 hours with some Pecan Wood and Mesquite Lump. Paired with our in-House Rub is Sweet and Savory with a kick to your taste buds.
Our Rib's may differ from one Pop Up to the next, we serve Spareribs and Even St. Louis Rib's. But our method will remain the same from our House Rub and House Sauce to being smoked for over 5 hours till they are tender to every bite.
These delicious Candy Bacon Bites are one of a kind, smoked over Pecan Wood and then braised in our House Sauce with some sweet Brown Sugar. Great on our Smoked & Loaded Potatoe or a BBQ Sandwich.
Our Sausage is a mixture of Beef and Pork, Blended with rich flavors and unique seasonings. Cheese and Jalapeno infused for a nice kick and a casing that will just snap to the bite.
All our Chicken is cooked in our custom-made Direct Heat Pit that allows you to experience the best of both worlds of grilling and smoking. Brined in our special poultry blend made for chicken with a kick. Then cooked over a bed of Mesquite Lump with some Hickory Wood.
Our Prime Beef Short Rib's Aka The Dino Rib, Are Smoked and Tended to the same way our prime briskets are. We believe in a great bark and meat loaded with flavor all the way through to the bone. This 1.5 pound of meat on a bone is a limited menu item.
